Nellie and Joe’s Key Lime Bites for a Crowd
Written by Rocky Mountain Woman on March 4, 2013 – 7:06 am -This is a great dessert idea for a lot of people. I make it all the time when I cater and it’s always a hit!
Ingredient List:
3 cups graham cracker crumbs
2/3 cup sugar
12 T butter, melted
2 14 oz cans sweetened, condensed milk
6 egg yolks
1 cup Nellie & Joe’s Key West Lime Juice (I love this stuff)
Measure the graham cracker crumbs in a bowl
add sugar
melt butter
add to bowl and stir until mixed
spray a cookie sheet with cooking spray
dump the crumb mixture on the pan
then with a cup push the crumbs down so they are packed in tightly
mix the milk, eggs yolks and lime juice together
until they are smooth, pour in the prepared crust
and bake until the center is set – about 25 to 30 minutes – in a preheated 350 degree oven
cut into pieces and serve

Hershey’s Chocolate Bar Ice Cream

Ingredient List:
2 C Whipping Cream, divided
2 squares semisweet baking chocolate, cut into chunks
2 squares unsweetened baking chocolate, cut into chunks
2 cups half and half
1 cup sugar
1/2 cup unsweetened cocoa powder
8 egg yolks
4 t vanilla
1/8 t salt
2 or 3 Hershey Chocolate Bars
In a small saucepan, place 1/2 cup whipping cream, semisweet chocolate and unsweetened chocolate. Heat over medium low heat until chocolate melts. Set aside.

In medium saucepan over medium heat, heat half and half until very hot, but not boiling. Remove from heat and set aside.
In small bowl, combine sugar and cocoa powder. Set aside.
Place egg yolks in mixer bowl with whip attachment. Beat on low speed gradually adding sugar mixture until well blended and slightly thickened, then gradually add chocolate mixture and half and half
Return mixture to heat, stirring constantly over medium heat until small bubbles appear around the edge and the mixture is steamy.
Transfer to a large bowl, stir in remaining whipping cream, vanilla and salt. Cover and chill at least 8 hours.
When ice cream mixture is thoroughly chilled, freeze according to the directions for your ice cream freezer
chop Hershey Bars
add during the last few minutes of freeze time

Grilled Nectarines with Blue Cheese

Wash the nectarines
cut them in half
brush with light olive oil or grapeseed oil
grill until charred a little and top with blue cheese
CAUTION: These may become addicting…
