HUMMUS
Written by Rocky Mountain Woman on April 26, 2013 – 6:16 am -This is such a simple classic recipe, but one I make a lot. It’s a great tv snack or with a glass of wine and some pita chips, dinner sometimes!
Ingredient List:
1 can garbanzo beans
4 T fresh lemon juice
2 T tahini
1 t salt
1 T olive oil – optional
1 clove garlic
pepper from the mill to taste
So, see if you can follow me here, this is REALLY REALLY REALLY hard
put all the ingredients in a food processor, and process until smooth.
garnish with a few grinds of pepper and serve!

Simply Salsa
Written by Rocky Mountain Woman on November 2, 2012 – 6:39 am -1 or 2 fresh jalapenos
3 garlic cloves
1 15 ounce can fire roasted tomatoes
1/4 cup chopped fresh cilantro
2 T fresh lime juice
In a skillet, roast the jalapeno(s) and garlic, turning frequently until blotchy and brown – about 10 to 15 minutes
Cool until you can handle, then peel and roughly chop. Place in a food processor and pulse until finely chopped. Add the tomatoes and pulse until coarsely pureed
stir in the cilantro, lime juice and salt to taste

Mushroom/Goat Cheese Toast

Ingredient list:
small package of white button mushrooms
3/4 cup creme fraiche
squeeze of lemon juice
slight grate of lemon zest
salt and pepper
baguette
olive oil
garlic
1/2 lb goat cheese (at room temperature)
clean and slice the mushrooms
saute in a skillet until soft and then add the creme fraiche, lemon juice and grated peel, salt and pepper to taste, stirring and cooking until heated through
slice the baquette, brush the slices with olive oil and rub with the cut side of a garlic clove, toast until browned
spread the goat cheese on the toasted baguette slices
top with the mushroom mixture, salt and pepper
I had mine with a chilled glass of Chenin Blanc…
YUM!
