Gruyere Pasta

Decadent, indulgent, creamy, sinful, SIMPLE …need I go on?

Ingredient List:

1 package asparagus, cut into small pieces
1 package mushrooms, sliced
1 small jar sun dried tomatoes, chopped
1 lb block gruyere cheese, cubed
1 package penne pasta
2 cloves garlic, chopped
2 T olive oil

Saute the asparagus, mushrooms, tomatoes and garlic in the olive oil until soft on medium low heat, about 20 to 30 minutes

cook pasta in salted water according to al dente directions, drain, add sauteed vegetables and cubed cheese

put the lid on the pan and let it sit over a very low heat or no heat at all for fifteen minutes for so to let the cheese melt a bit…

I had mine with a green salad and a glass of Pinot Noir…

    I’m salivating on the computer again! I’m making pork and sauerkraut for dinner – a PA Dutch tradition for good luck in the new year. Unfortunately, no gruyere involved! Happy 2014.
