Green Goddess Salad

Green Goddess Dressing was developed at the Palace Hotel in San Francisco in the 20′s as a tribute to George Arliss who was part of the cast of a play called “The Green Goddess”

This recipe is adapted from my latest obsession, “Sunday Suppers at Lucques” by Suzanne Goin

Ingredient List:

2 heads of Romaine Lettuce, outer leaves removed, rinsed and dried and chopped)
1 large egg yolk (make sure you can trust your egg supply or use pasteurized eggs)
3/4 cup grapeseed oil (the recipe uses a full cup, but I like my dressing a little tart)
1 1/2 cups parsley
2 T tarragon leaves
3 T chives
1 clove of garlic, chopped
2 salt-packed anchovies, rinsed, bones removed
juice of 1 lemon
1 T plus 1 t Champagne vinegar
2 avocados
1 large cucumber
kosher salt and pepper from the grill

Place the egg yolk in a large stainless steel bowl and slowly wisk in 1/2 cup of the oil, little by little until it emulsifies

then put the rest of the ingredients in a blender (except for the lettuce, cucumber and avocado) and blend for a few minutes

slowly incorporate the herb/anchovy paste in to the oil mixture, whisking constantly

peel and slice the cucumber

chop the lettuce into small pieces, add the cucumber and toss, remove the pit, peel and slice the avocado, and arrange on a platter or in a large bowl. Drizzle the dressing over it…

I cut everything in half and served it for dinner with roast chicken and a glass of Pinot Noir…
