Simply Salsa
Written by Rocky Mountain Woman on November 2, 2012 – 6:39 am -1 or 2 fresh jalapenos
3 garlic cloves
1 15 ounce can fire roasted tomatoes
1/4 cup chopped fresh cilantro
2 T fresh lime juice
In a skillet, roast the jalapeno(s) and garlic, turning frequently until blotchy and brown – about 10 to 15 minutes
Cool until you can handle, then peel and roughly chop. Place in a food processor and pulse until finely chopped. Add the tomatoes and pulse until coarsely pureed
stir in the cilantro, lime juice and salt to taste

Yun. I didn’t have enough tomatoes this year to make my own salsa. I must try this with the fire roasted canned.

Typically, it’s used as a dip for tortilla chips, but I like it on plain broiled fish or grilled chicken also…
