Mushroom/Goat Cheese Toast

Creamy and rich, great as an appetizer or a light lunch….

Ingredient list:

small package of white button mushrooms
3/4 cup creme fraiche
squeeze of lemon juice
slight grate of lemon zest
salt and pepper
baguette
olive oil
garlic
1/2 lb goat cheese (at room temperature)

clean and slice the mushrooms

saute in a skillet until soft and then add the creme fraiche, lemon juice and grated peel, salt and pepper to taste, stirring and cooking until heated through

slice the baquette, brush the slices with olive oil and rub with the cut side of a garlic clove, toast until browned

spread the goat cheese on the toasted baguette slices

top with the mushroom mixture, salt and pepper

I had mine with a chilled glass of Chenin Blanc…

This is adapted from a Rick Bayless recipe

Ingredient List:

6 to 8 medium tomatillos (husked and rinsed)
1/2 large onion
4 garlic cloves
1/4 cup roasted peanuts
1 T Worcestershire sauce
1 T sugar
1 roasted jalapeno

Husk and rinse the tomatillos
