Attack of The Killer Tomatoes

They may look all innocent and unassuming, but at last count I have 4,327 of these babies invading my kitchen

In an effort to avoid making tomato sauce which makes it unbearably hot in here, I am trying to eat them for every single meal

This was breakfast this morning, a little bit different take on an old favorite:

Ingredient List:

tomatoes
fresh mozzarella
mayonnaise
salt
pepper from the mill
bread

dried basil (I used my fresh basil all up making pesto, so if you have fresh you can just chop it finely and substitute)

Take two innocent slices of bread and spread mayonnaise on them, sprinkle with salt, pepper and basil

Slice and put on one side of the bread as many tomatoes as you dare, sprinkle them with more salt and pepper

slice fresh mozzarella and put on the other side

melt a little butter in a skillet and carefully bring the two slices of bread together and grill lightly, until the cheese gets all gooey and nice

Have you ever known anyone who can make such a big deal out of a tomato sandwich?

Isn’t this just beautiful though? What a great way to start an August day…

    That is my hands down favorite way to eat them, too.
    Love doing the same thing with fresh radishes….right out of the garden.

    I just left you a comment on your country life post.
    Surely I just read this post wrong about how many tomato’s you have in your kitchen right now. lol
    Girlfriend how in the world did you end up with so many. I have to say this recipe here has me wanting one of these sandwiches really bad. haha
    If I lived near you I would way 200lbs.
    So wish I were there now I would have one of these and some of that sangria you mentioned on the post before this one.
    I so enjoyed my visit here today.
    It is 100 here today so I am not mowing. Today I am cleaning out the one and only closet I have to see if I have any clothes I can wear to Maine in Sept.
    Have you ever been there? I am over the moon excited about going.

    Tomato sandwiches … mmmmm. If you have room in your freezer, toss them whole into a freezer bag or lidded bowl and keep them on ice. Frozen-then-thawed tomatoes are super easy to peel, and sauce is much more enjoyable to make in the heat of the winter kitchen. :)

    Another good and simple recipe : a sandwich with just, garlic, olive oil, basil, salt and tomatoes.
    Quite the same but very good too.
    You can even make a tomatoes pie.
