Bridge to a New Reality

It’s my new reality, this life with less joy. Replacing the abundant energy of years past is a quiet acceptance of a new element of compromise, a conceding to the onslaught of hurt that builds over the years and slowly erodes the joy of youth. I fought against it for a long time but have now come to a truce that we both can live with, my companion and I. We’ve reached a ceasefire that allows me to live a calmer life than previously with less complications and drama. Not quite a fair tradeoff for the happiness I once owned, but a consolation nonetheless.

especially spinach
Ingredient list:
3 or 4 slices of bacon
1 chopped shallot
large handful of spinach
3/4 cup vinegar (I usually use cider vinegar)
1/2 cup sugar
Chop bacon and brown in a large skillet
chop the shallot (you can use red onion if you don’t have a shallot laying around – around 1/3 cup should do it)
saute with the bacon for a few minutes until it softens a little
add vinegar and scrape up everything you can from the bottom of the skillet
add the sugar and stir until it dissolves
rinse the spinach thoroughly
shake the excess water off and plop it down on top of the bacon/shallot mixture
stir it around so the spinach all wilts
this is pretty tart all by itself, but I usually add another splash of vinegar and a good sprinkling of salt….

Asparagus/Brie Pasta

This is actually a recipe that a friend gave me a long time ago. I make it all the time! It’s also a good recipe to feed a crowd (just double or triple the amounts). It keeps well and left overs are great warmed up the next day for lunch…
Ingredient List:
1 box Penne pasta
1 package button mushrooms
1 bunch asparagus
small jar sun dried tomatoes in olive oil
1 large round of brie
minced garlic (optional, but wonderful!)
olive oil
Wash the asparagus
chop in bite sized pieces
wash the mushrooms
slice
put a few tablespoons of olive oil in a large skillet and add the asparagus and mushrooms
sun dried tomatoes
and garlic if you want (I want!)
remove the rind from the cheese and cut it up into small pieces
cook the pasta according to the package directions (use lots of salt in the cooking water!) Drain the pasta and put it in a large dutch oven
dump the vegetables on top
add the cheese
cover and place over very low heat until the cheese melts, stirring occasionally….
This is kind of my basic vegetarian pasta recipe. You can add more or less cheese, vegetables, etc.
To make it a little heartier, I sometimes saute a few chicken breasts, cut into bite sized pieces in a skillet until cooked through and then add it to the pasta.
Typically this dish would probably be paired with a white wine, but I love it with a glass of Pinot Noir….
