Mary Jo from Cleveland’s Molasses Cookies
Written by Rocky Mountain Woman on April 27, 2012 – 6:06 am -These are very similar to my ginger cookies, but have a little different texture and a slightly richer taste. They are wonderful! Make some now!
Ingredient list:
2 cups all purpose flour
2 t baking soda
1 t ground cinnamon
1/2 t ground ginger
1/2 t Kosher salt
1/4 c molasses
sugar for sprinkling on the top (I used raw sugar – it’s healthier tee hee)
3/4 cup vegetable shortening melted to equal 1/2 cup
1 extra large egg (I used a plain old large egg)
Melt the vegetable shortening & let it cool
Sift together the flour, baking soda, cinnamon, cloves, ginger and salt
action sifting!
In a stand mixer with a whisk attachment, beat the molasses, sugar, melted shortening and egg at medium speed for 3 minutes – or beat for three minutes with a hand mixer
Add 1/2 of the dry ingredients and incorporate slowly
Add the remaining dry ingredients and mix to combine. Chill the dough in the refrigerator for 15 minutes. Here the recipe I found said to roll the dough out and cut it, but I’m wayyyy too lazy for that, so I just made little balls and placed them on parchment paper, sprinkled with raw sugar
Bake for about 15 minutes at 325 degrees and eat warm with a glass of milk…
