Quickie Polenta

Start where all things wonderful start, with a pat (extra large) of butter melting in a skillet
Cut fresh corn off two cobs and add to the melted butter, or just add 1/2 bag of frozen corn
let it sizzle for a minute and then add 1 1/2 cups of water (more or less depending on how many people you are feeding)
then slowly add instant polenta a little at a time, waiting a minute to see how much it thickens, until it seems thick enough, let is simmer for a minute or so…
salt and pepper!
yum!!!
Could that be any easier? Seriously good and seriously easy….

Were you thinking of.me when you posted this easy polenta? I made it once and it got so gummy we couldn’t eat it. Will try yours. Just wanted to mention that Blogsy seems to do a good job for iPad but I definitely suggest watching all the “how to” videos first. It’s not intuitive and frustrated me at first. I’ve now done a post on each of my blogs and all seems OK. I’m coming into UT with a friend to go to Zion first weekend in May. Needed something to publish blog while traveling. The Blogger app is no good with pics.

What? Instant? hmmm…I always, well maybe twice a year, use the kind you need to s.t.i.r forevah! I’ll have to look for this instant kind, I love polenta:)

Darn, I just made some brown rice pasta but this would have been great with the sausage spaghetti sauce I have simmering. Yum.
