SPEECY SPICY SPAGHETTI

This will get your motor running……
Ingredient list:
1/2 lb bacon
4 large garlic cloves
2 lbs ground beef
1 Poblano pepper
2/3 cup Panko
2 large eggs
4 cups chopped onions, preferably red
Freshly grated Parmesan cheese – lots!
5 T minced fresh basil
2 t dried crushed red pepper
2 t Kosher salt
pepper from the mill
2 28 ounce cans of diced tomatoes in juice
3 T olive oil
2 cups white wine
1 1/2 lbs spaghetti
Start by roasting, peeling and dicing a poblano pepper

Chop the bacon
put the ground meat in a large mixing bowl, add 1/2 of the bacon and 1/2 of the garlic (pressed through a garlic press)

2 T basil, red pepper, 1/3 cup grated Parmesan, 1 T salt and pepper from the mill
Mix it all up with your hands and form into medium sized balls. Fry the rest of the bacon until crispy and set aside. Fry the meatballs in a little of the bacon grease until browned and cooked through
Pour the tomatoes (I use San Marzano when I can get them) in a blender

saute 3 1/2 cups of diced onions until slightly carmelized

and add the tomato puree and wine, simmer for about 1/2 hour, while you kick off your shoes, put a pot of water on to boil for the pasta, and pour yourself the glass of wine you so richly deserve
Add 2 T of the basil, bacon, salt and pepper to taste
Cook the pasta according to the directions, drain and top with the meatballs, sauce, the rest of the basil and a good amount of grated Parmesan….

Try it with a spicy Zinfandel. Zin tends to have peppery undertones which will compliment the spicy peppers in the sauce!

I LOVE spicy spaghetti! About 20 minutes before the meal, I put a cup of merlot in my spaghetti sauce and turn up the heat to burn off the alcohol, and allow the sauce to re-thicken. The results are a really rich-tasting sauce!!

Oh my…this looks totally superb!
I’m practically drooling over this recipe.
I have some kind of leftover bbq’d chicken and corn soup for dinner and this looks about a bazillion times better!

I have never made spaghetti and meatballs before, but this really makes me want to give it a shot. It looks absolutely tasty!
