WONDERFUL PISTACHIO CHICKEN

Ingredient list:
1/2 cup shelled pistachios
2 T black sesame seeds
2 T ground coriander
1 1/2 t ground cumin
1 egg
1 T water
1/4 cup flour
1 T paprika
Salt and pepper
4 chicken pieces, your choice
cooking spray
Chop pistachios in a food processor and place in a bowl
add sesame seeds
coriander and cumin
Beat egg and water together
and, in another bowl, mix flour and paprika
dip in flour mixture, then in egg mixture and then in pistachio mixture (roll it around good to get the chicken thoroughly coated)
Place on a baking sheet that has been coated with cooking spray
Bake at 400 degrees for 25 to 30 minutes, or until juices run clear when pierced in the thickest spot.
Add a green salad and a glass of Sauvignon Blanc, and you are in pistachio heaven…sigh..

Now that looks good and healthy. Dr. Oz loves pistachios as a health food. I really abused my health when the power was out. Can’t cook, then why not eat candy and potato chips? Thanks for the incentive to get back on the wagon.

I’m a huge pistachio fan RMW!
And putting a crust on meat is such a great way to add that flavour without having to make a sauce

Yumm! I love coming and if it were possible, I would savor every recipe you share! They are simply an extravaganza to the eyes and my tastebuds can imagine how delicious this Pistachio chicken is! We love Pistachios

Cobb salad is one of my all-time favorites! Chicken with pistachios looks DIVINE! Pistachios grow here, and I always have some in my kitchen!!
