WONDERFUL PISTACHIO CHICKEN

Ingredient list:
1/2 cup shelled pistachios
2 T black sesame seeds
2 T ground coriander
1 1/2 t ground cumin
1 egg
1 T water
1/4 cup flour
1 T paprika
Salt and pepper
4 chicken pieces, your choice
cooking spray
Chop pistachios in a food processor and place in a bowl
add sesame seeds
coriander and cumin
Beat egg and water together
and, in another bowl, mix flour and paprika
dip in flour mixture, then in egg mixture and then in pistachio mixture (roll it around good to get the chicken thoroughly coated)
Place on a baking sheet that has been coated with cooking spray
Bake at 400 degrees for 25 to 30 minutes, or until juices run clear when pierced in the thickest spot.
Add a green salad and a glass of Sauvignon Blanc, and you are in pistachio heaven…sigh..

CUCUMBER AND BLUE CHEESE SALAD
Written by Rocky Mountain Woman on April 29, 2011 – 5:54 am -This is a quick, easy peasy salad you can whip up in a few minutes…
Ingredients:
1 head of iceberg lettuce
2 large cucumbers, peeled and sliced
1/2 cup blue cheese sprinkles
1/2 cup walnuts, roasted
1/3 cup green onion, diced
1/4 cup white wine vinegar
1/2 cup light salad oil, extra virgin olive or grapeseed
salt and pepper to taste
put it in a bowl and pile the cucumbers on top

add the blue cheese, onions and walnuts (roast the walnuts for about 15 minutes in a 250 degree oven)

Whisk the oil and vinegar together

pour over the salad and serve…
perfect with Grandma’s mac n cheese and a crisp Sauvignon Blanc

BANANA BREAD

This is sooooo amazing , warm from the oven with a little dab of butter. It’s Martha’s recipe, so you know it’s good!
Ingredient list:
1/2 cup butter, room temperature
1 cup sugar
2 eggs
1 1/2 cups unbleached flour
1 t baking soda
1 t salt
1 cup mashed very ripe bananas
1/2 cup sour cream
1 t vanilla
1/2 cup chopped walnuts or pecans
I apologize in advance for the “action mixer shots”, I just couldn’t help myself….
add the eggs and mix thoroughly
Sift the dry ingredients and add slowly to the butter, sugar egg mixture

add the mashed bananas, sour cream and vanilla, mix thoroughly
Stir in the nuts and pour into one large or several smaller loaf pans which have been slathered in butter

Bake for about 1 hour at 350 degrees and enjoy
