NEW YEAR’S RESOLUTIONS
Written by Rocky Mountain Woman on December 29, 2010 – 2:09 pm -I always try and spend a little time at the end of the year to set some goals for the new year. This year I am spending a few days in Arizona (hi Jenny!) to get away from the cold and snow in Utah and wasn’t sure I would be able to hook up with Jenny Matlock’s Alphabet Thursday because I’d be off playing golf or enjoying my time off work. However, it’s raining right now, and I am sitting in a hotel room in Lake Havasu with my air card and my laptop, so it seems like the perfect time to make and share some goals for the new year with my wonderful blog friends.
Hmmm…hold on a minute will you while I get a glass of wine? I know it’s only three o’clock, but I’m on vacation!
Ok, I’m back…
I guess my main goal for the new year is to spend more time with friends and family. I work waayyy too much for someone my age and I need to cut back on that a bit and spend more time enjoying life and less time just “getting through it”.
I would like to spend more time reading and writing. I want to continue to work on the novel I started in November. I want to spend more time with a book in my hand.
I also would like to improve my cooking skills. I bought this book by Madeleine Kamman at a used book store and I am going to try and cook my way through it this year.
I want to learn more about wine and winemaking. I may try and make some wine this year or maybe just learn about it this year and try making some in 2012…we’ll see!
I also want to learn more about photography. I have signed up for a photography class at the University of Utah and I’m pretty excited about it.
And, finally, I want to spend more time blogging and visiting with all of the wonderful, intelligent talented people I’ve met in the blogosphere this year! Happy New Year to y’all! What are your New Year’s Resolutions?

LINGUINE WITH CLAM SAUCE
Written by Rocky Mountain Woman on December 15, 2010 – 12:53 pm -It’s been cold here in the mountains and I’ve been in comfort food mode. To me, nothing says comfort like pasta and cream. Here’s my very favorite version:
Ingredient list:
1 lb linguine
1 T olive oil
2 T butter
3 garlic cloves, minced
1 large can chopped clams
1 cup of white wine
1 lemon
Handful of parsley
1/2 pint heavy cream
Shredded Parmesan cheese
Start by adding the oil to the skillet and melting the butter

mince the garlic

add the clams (I buy these massive cans of clams when I’m in Oregon. If you don’t have a giant can, just use two or three regular sized ones)

let simmer a little while you open a bottle of wine and pour a glass

then pour about a cup of wine into the skillet

let that simmer for about five minutes and then add another pat or three of butter and a pinch of Kosher salt

slice the lemon in half and squeeze 1/2 of it on the sauce, slice the other half for a garnish

gulp, now be brave! pour in 1/2 pint of heavy cream
let the whole thing simmer while you make the linguine and sip a little more wine.
After the linguine is cooked, put it in a serving bowl and top with the sauce, some sliced lemons, ground pepper from the mill, and shredded Parmesan cheese. Serve with a nice crisp Chardonnay (I know it’s winter, but white wine really goes well with this dish).


If this doesn’t warm you up, nothing will!
